Method
- Preheat the oven to 350 degrees.
- Spray oven-safe bowl with olive oil spray and place the tortilla in the bowl. The bowl should be slightly smaller than the size of the tortilla (you want the sides of the tortilla to come up the sides of the bowl slightly to form a bowl shape for the egg to sit in).

- Add the eggs on top of the tortilla and mix with a fork.
- Add the cottage cheese to the eggs and mix well.

- Top with shredded mozzarella, veggies, and seasonings.

- Bake for 20-25 minutes or until the egg mixture is no longer runny.
- Enjoy!
